Crockpot Marry Me Chicken
Ingredients:
4 boneless skinless chicken breasts (or thighs)
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
Salt and pepper to taste
1 tbsp olive oil (optional, for searing)
½ cup chicken broth
1 cup heavy cream
½ cup grated Parmesan cheese
½ cup sun-dried tomatoes (in oil, drained and chopped)
3–4 cloves garlic, minced
1 tsp Italian seasoning
½ tsp crushed red pepper flakes (optional, for a little kick)
Fresh basil or parsley for garnish

Instructions:
1. Season the chicken:
Sprinkle both sides of the chicken with garlic powder, onion powder, paprika, salt, and pepper.
2. (Optional) Sear the chicken:
For extra flavor, quickly sear the chicken in a hot skillet with olive oil—about 2 minutes per side—before adding to the crockpot.
3. Add to crockpot:
Place the chicken in the crockpot. Add chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, minced garlic, Italian seasoning, and red pepper flakes.
4. Cook:
Low: 4–5 hours
High: 2½–3 hours
Chicken should be tender and fully cooked (internal temp 165°F).
5. Thicken the sauce (if needed):
If the sauce is too thin, remove the lid for the last 30 minutes or stir in a slurry (1 tbsp cornstarch + 2 tbsp water).
6. Serve:
Spoon over pasta, mashed potatoes, or rice. Garnish with fresh basil or parsley and a little extra Parmesan if desired.
