This refreshing seafood salad is a light, flavorful dish perfect for warm days, special gatherings, or as a luxurious appetizer. It’s a delightful mix of tender shrimp, crab, and calamari tossed in a zesty lemon-garlic dressing that enhances every bite.

Ingredients:

  • 1 cup cooked shrimp, peeled and deveined
  • 1 cup imitation crab or lump crab meat
  • ½ cup cooked calamari rings
  • ½ cup celery, finely chopped
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, minced
  • 2 tbsp fresh parsley, chopped
  • ¼ cup mayonnaise
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp Dijon mustard
  • Salt and black pepper to taste

Instructions:
In a large bowl, combine shrimp, crab, and calamari. Add celery, bell pepper, onion, and parsley. In a small bowl, whisk together mayonnaise, olive oil, lemon juice, Dijon mustard, salt, and pepper until creamy. Pour the dressing over the seafood mixture and toss gently to coat. Chill for at least 30 minutes before serving to allow the flavors to meld.

Serve on crisp lettuce leaves or with crackers for a cool, elegant seafood treat.
