Ingredients:

  • 4 salmon fillets (about 6 oz each, skinless if preferred)
  • 1 cup lump crab meat (fresh or canned, drained)

  • 2 tbsp cream cheese, softened
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp Old Bay seasoning (or seafood seasoning)

  • 1 garlic clove, minced
  • 2 tbsp green onions, finely chopped
  • Salt and black pepper, to taste
  • 1 tbsp melted butter
  • Lemon wedges and parsley for garnish

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with olive oil.
  2. Prepare the crab filling: In a medium bowl, mix the crab meat, mayonnaise, cream cheese, Dijon mustard, lemon juice, Old Bay seasoning, breadcrumbs, garlic, and green onions until combined. Season lightly with salt and pepper.
  3. Prepare the salmon: Using a sharp knife, cut a slit in the center of each salmon fillet to create a pocket (do not cut all the way through). Lightly season the salmon with salt and pepper.
  4. Stuff the salmon: Spoon the crab mixture evenly into each pocket, pressing gently to fill. Place the stuffed fillets in the prepared baking dish. Brush the tops with melted butter for a golden finish.
  5. Bake for 18–22 minutes, or until the salmon flakes easily with a fork and the stuffing is hot and slightly golden.
