Creamy Tuscan Shrimp

Ingredients
• 2 tbsp olive oil
• 2 tbsp butter
• 1 lb shrimp, peeled, deveined, tails off
• Salt & pepper to taste
• 3–4 cloves garlic, minced
• 1 cup cherry or grape tomatoes, halved
• 3–4 cups baby spinach
• 3/4 cup heavy cream
• 1/4 cup freshly grated Parmesan
• 2 tbsp fresh basil or parsley, thinly sliced
How to Make It
Sear the Shrimp
In a large skillet, heat olive oil and butter over medium heat. Add shrimp, season with salt and pepper, and sauté for 2–3 minutes per side until just pink and cooked through. Remove and set aside.
Build the Flavor
In the same skillet, add garlic and cook for about 30 seconds until fragrant. Toss in halved tomatoes and sauté until they begin to blister and soften (about 3–4 minutes).
Wilt the Spinach
Stir in the baby spinach and cook until just wilted. This adds freshness and color.
Make It Creamy
Pour in heavy cream, sprinkle in Parmesan, and stir gently until the sauce thickens slightly (2–3 minutes).
Bring It Together
Return the shrimp to the pan, coat them in the sauce, and let everything simmer for another minute. Finish with sliced basil or parsley.
