Ready in under 30 minutes—perfect for weeknights or special occasions.
Ingredients
For the Salmon:
- 4 salmon fillets (skin-on or skinless)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional)
- 1 tbsp olive oil
- 1 tbsp butter
For the Creamy Florentine Sauce:
- 3 garlic cloves, finely minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- ½ tsp red pepper flakes (optional)
- 2 cups fresh spinach, chopped
- ½ cup cherry tomatoes, halved (optional)
Instructions
- Cook the Salmon: Pat the salmon dry with paper towels and season both sides with salt, pepper, and paprika. Heat the olive oil and butter in a large skillet over medium-high heat. Place the salmon skin-side down (if using skin) and sear for 4–5 minutes until the skin is crispy and the underside is golden. Flip and cook another 2–3 minutes, depending on thickness, until just cooked through. Remove salmon from skillet and set aside.
- Prepare the Sauce: In the same skillet, reduce heat to medium and add the minced garlic. SautΓ© until fragrant (about 30 seconds). Pour in the heavy cream, then stir in the grated Parmesan, Dijon mustard, lemon juice, and red pepper flakes. Stir and let the sauce simmer gently for about 2 minutes until it begins to thicken slightly.
- Add the Greens & Tomatoes: Stir the chopped spinach and cherry tomatoes into the sauce. Cook just until the spinach wilts and the tomatoes are slightly softened, about 1–2 minutes.
- Finish & Serve: Return the salmon to the skillet and spoon sauce over each fillet. Simmer together for 1–2 minutes to warm through and meld flavors. Serve immediately over rice, mashed potatoes, pasta, or alongside roasted vegetables.

Notes & Tips
- For extra-crispy skin, press the salmon gently with a spatula for the first minute of cooking to ensure even contact with the skillet.
- If the sauce gets too thick, loosen with a splash of chicken or vegetable broth.
- Swap heavy cream for half-and-half for a lighter sauce (the texture will be a bit thinner).
- Serve with lemon wedges for extra brightness.
