Stuffed Baked Potatoes



Smoky Sausage & Cheese Stuffed Baked Potatoes


Ingredients:


4 large russet potatoes


1 tbsp olive oil


Salt and pepper, to taste


8 oz smoked sausage (like kielbasa), diced


1/2 small onion, finely chopped


1 clove garlic, minced


1/2 cup sour cream


1/4 cup milk or cream


1 cup shredded cheddar cheese (or a blend)


2 tbsp butter


2 green onions, sliced (optional)

Instructions:


1. Bake the Potatoes:


Preheat oven to 400°F (200°C). Scrub and dry the potatoes.


Rub them with olive oil and sprinkle with salt.


Place directly on the oven rack or on a baking sheet and bake for 50–60 minutes, until tender.




2. Cook the Sausage Filling:


In a skillet over medium heat, sauté diced sausage until browned (about 5–6 minutes).


Add chopped onion and garlic; cook until softened and fragrant, about 2–3 minutes. Remove from heat.




3. Stuff the Potatoes:


Once baked, let potatoes cool slightly, then slice the tops open and carefully scoop out the insides into a bowl (leave a little potato around the edges to keep them sturdy).


Mash the scooped potato with butter, sour cream, and milk until creamy.


Stir in the sausage mixture, cheese, salt, and pepper to taste.




4. Bake Again:


Spoon the filling back into the potato shells.


Sprinkle a little extra cheese on top if desired.


Return to the oven and bake at 375°F (190°C) for 15–20 minutes, or until golden and bubbly.




5. Garnish and Serve:


Top with green onions, extra sour cream, or even hot sauce if you like a kick!
