Cheesy Beef and Potato Cakes
Ingredients:
2 cups mashed potatoes (leftovers work great!)
1/2 lb ground beef
1/2 small onion, finely diced
1 garlic clove, minced
1/2 cup shredded cheddar cheese
1 egg
1/4 cup breadcrumbs (plus more for coating)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika (optional)
1 tbsp chopped parsley (optional)
Oil for frying

Instructions:
1. Cook the Beef:
In a skillet over medium heat, cook ground beef with onion and garlic until browned and fully cooked. Drain excess grease and let it cool slightly.
2. Mix the Cakes:
In a large bowl, combine mashed potatoes, cooked beef mixture, cheese, egg, 1/4 cup breadcrumbs, and seasonings (salt, pepper, paprika, parsley). Mix until well combined.
3. Form Patties:
Scoop out mixture and shape into patties (about 8). Coat each patty lightly with breadcrumbs for extra crispiness.
4. Fry:
Heat oil in a skillet over medium heat. Fry patties for about 3–4 minutes per side or until golden brown and crispy.
5. Serve:
Drain on paper towels. Serve hot with sour cream, ketchup, or your favorite dipping sauce.
