Cheesy One Pot Beef & Potato Skillet
Ingredients:
1 lb ground beef
1 small onion, diced
3–4 medium potatoes, peeled and diced
2 cloves garlic, minced
1 tsp paprika
1/2 tsp black pepper
1 tsp salt (or to taste)
1/2 tsp dried thyme (optional)
1 1/2 cups beef broth
1 cup shredded cheddar cheese
1/2 cup mozzarella cheese (optional, for extra cheesiness)
2 tbsp olive oil or butter
Fresh parsley or green onions for garnish
Instructions:
1. Cook the beef
In a large skillet or pot, heat olive oil over medium heat. Add ground beef and onion. Cook until beef is browned and onion is soft. Drain excess grease if needed.
2. Add potatoes & seasoning
Stir in garlic, diced potatoes, paprika, pepper, salt, and thyme. Cook for 2–3 minutes to coat the potatoes with the seasoning.
3. Simmer
Pour in the beef broth, bring to a simmer. Cover and cook for 15–20 minutes, stirring occasionally, until potatoes are tender.
4. Cheesy goodness
Once the potatoes are soft and the liquid is mostly absorbed, sprinkle cheddar and mozzarella cheese over the top. Cover and let sit for 2–3 minutes until melted.
5. Garnish & serve
Sprinkle with chopped parsley or green onions and serve hot!
