Smoked Sausage & Potatoes Skillet


Ingredients:


1 lb smoked sausage, sliced into rounds


1½ lbs baby potatoes (or Yukon gold), halved or quartered


1 large onion, sliced


2 tbsp olive oil or butter


1 tsp garlic powder


1 tsp smoked paprika


Salt and pepper to taste


Fresh chopped parsley (optional, for garnish)



Instructions:


1. Parboil the potatoes (optional but helps with texture):

Place potatoes in a pot, cover with water, and bring to a boil. Simmer for 8–10 minutes until slightly tender. Drain and set aside.



2. Cook the sausage:

In a large skillet over medium heat, add 1 tbsp oil and the sliced sausage. Cook until browned on both sides, about 5–7 minutes. Remove and set aside.



3. Sauté the potatoes and onions:

In the same skillet, add another tbsp of oil. Add parboiled potatoes and onions. Season with garlic powder, paprika, salt, and pepper. Cook until the potatoes are crispy and golden, stirring occasionally (about 10–12 minutes).



4. Combine and finish:

Add the sausage back to the skillet, stir everything together, and cook for another 2–3 minutes until everything is heated through and flavorful.



5. Serve:

Sprinkle with fresh parsley and serve hot.
