Okra Stew recipe
Ingredients:
1 lb (450g) fresh or frozen okra, sliced
1 lb (450g) beef, lamb, or chicken (optional), cut into cubes
1 large onion, chopped
3-4 garlic cloves, minced
2 tbsp tomato paste
2-3 fresh tomatoes, chopped (or 1 can diced tomatoes)
1 tsp ground coriander
1 tsp cumin
½ tsp paprika (optional)
Salt and black pepper to taste
2 tbsp oil (olive or vegetable)
2 cups water or broth
1 tbsp lemon juice or vinegar (optional, helps cut the sliminess)
Instructions:
1. Sauté the meat (if using):
In a large pot, heat oil over medium heat. Add the meat and cook until browned. Remove and set aside.
2. Cook the aromatics:
In the same pot, add onions and cook until soft. Add garlic, stir for a minute, then add tomato paste. Let it caramelize slightly for deeper flavor.
3. Add tomatoes & spices:
Stir in the chopped tomatoes, coriander, cumin, paprika, salt, and pepper. Cook until tomatoes break down (5–10 min).
4. Simmer:
Add the browned meat back in with 2 cups of water or broth. Simmer covered until the meat is tender (30–45 min depending on the meat).
5. Add okra:
Stir in the okra and a splash of lemon juice or vinegar. Simmer uncovered for another 15–20 minutes until okra is tender and the stew thickens.
6. Taste & adjust:
Check seasoning and acidity. You can add a little sugar if it's too tangy.
