Garlic Parmesan Chicken Meatloaf
Ingredients:
1 ½ lbs ground chicken
¾ cup breadcrumbs (Italian or plain)
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
2 eggs
3 cloves garlic, minced
1 tsp onion powder
1 tsp dried parsley
½ tsp salt
½ tsp black pepper
2 tbsp milk
2 tbsp olive oil
Optional: ¼ tsp red pepper flakes (for a little heat)
Topping:
¼ cup shredded mozzarella
2 tbsp grated Parmesan
1 tbsp melted butter mixed with 1 minced garlic clove
Chopped parsley for garnish

Instructions:
1. Preheat oven to 375°F (190°C). Line a loaf pan or baking sheet with parchment or lightly grease it.
2. Mix the meatloaf:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, eggs, garlic, milk, olive oil, and seasonings. Mix until just combined—don’t overmix.
3. Shape and bake:
Transfer the mixture into the loaf pan or shape into a loaf on the baking sheet. Bake uncovered for 40–45 minutes, or until the internal temp hits 165°F (74°C).
4. Add the topping:
Mix melted butter with garlic, and brush over the top of the meatloaf. Sprinkle mozzarella and Parmesan over it, then return to the oven for 5–7 more minutes to melt and slightly brown the cheese.
5. Rest and serve:
Let the meatloaf rest for 5–10 minutes before slicing. Garnish with parsley if you like.
