Cheesy Hamburger Rice Casserole
Ingredients:
1 lb ground beef
1 small onion, chopped
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) cream of cheddar or cream of chicken soup
1 ½ cups shredded cheddar cheese (divided)
1 cup uncooked long grain white rice
2 cups beef broth or water
Optional: ½ cup frozen peas, corn, or mixed veggies

Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
2. In a large skillet over medium heat, brown the ground beef with chopped onion until fully cooked. Drain excess grease.
3. Stir in garlic powder, salt, and pepper.
4. Remove from heat and mix in both cans of soup, 1 cup of shredded cheese, uncooked rice, and beef broth (or water). If using veggies, add them here too.
5. Pour the mixture into the prepared baking dish and spread evenly.
6. Cover tightly with aluminum foil and bake for 45 minutes.
7. Uncover, stir the casserole, top with remaining ½ cup of cheese, and bake 10-15 more minutes, until rice is tender and cheese is melted and bubbly.
8. Let rest for 5 minutes before serving.
