French Onion Meatloaf
Ingredients:
For the Meatloaf:
2 tbsp butter
2 large yellow onions, thinly sliced
1 tsp sugar
1 ½ lbs ground beef
½ cup breadcrumbs
1 egg
1 tbsp Worcestershire sauce
1 tsp garlic powder
½ tsp dried thyme
Salt and pepper to taste
1 cup shredded Gruyère or Swiss cheese (or mozzarella for milder flavor)
For the Glaze:
¼ cup beef broth
1 tbsp Worcestershire sauce
1 tbsp ketchup
1 tsp Dijon mustard

Instructions:
1. Caramelize the onions:
In a large skillet, melt butter over medium heat.
Add onions and sugar; cook slowly, stirring often, for 20–25 minutes until golden brown.
Set aside to cool slightly.
2. Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease it.
3. Mix the meatloaf:
In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, thyme, salt, and pepper.
Stir in half of the caramelized onions and the shredded cheese. Mix just until combined.
4. Shape & bake:
Press the meat mixture into the loaf pan.
Mix together glaze ingredients and brush half on top.
Bake for 45–50 minutes, brushing with remaining glaze halfway through. Internal temp should reach 160°F (71°C).
5. Top & serve:
Spoon remaining caramelized onions over the top before serving. Add extra cheese and broil for 2–3 minutes for a melty topping, if desired.
