EPIC BEEF NACHOS
Ingredients:
For the beef:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp taco seasoning (or a mix of chili powder, cumin, paprika, salt)
1/4 cup water
Optional: a dash of hot sauce
For the nachos:
1 large bag of tortilla chips
2 cups shredded cheddar or Mexican blend cheese
1 cup shredded Monterey Jack (for extra meltiness)
1 can black beans, drained and rinsed
1/2 cup pickled jalapeños
1/2 cup diced tomatoes or pico de gallo
1/2 red onion, diced
1 avocado, diced or sliced
Sour cream, guacamole, salsa (for topping)
Fresh cilantro, chopped
Lime wedges

Instructions:
1. Cook the Beef:
In a skillet over medium heat, brown the ground beef until fully cooked.
Add onion and garlic, sauté until soft.
Stir in taco seasoning and water, let simmer for 5 minutes until thickened. Set aside.
2. Layer the Nachos:
Preheat oven to 375°F (190°C).
On a large baking sheet or oven-safe platter, spread a layer of chips.
Add half the beef, beans, jalapeños, and cheese.
Repeat with a second layer of chips, toppings, and cheese.
3. Bake:
Bake for 10–15 minutes until cheese is fully melted and bubbly.
4. Finish with Toppings:
Add fresh tomatoes, red onion, avocado, and cilantro.
Drizzle with sour cream or dollops of guacamole and salsa.
