Cake with Chocolate




Mocha Layer Cake with Chocolate-Rum Cream recipe!


Ingredients:


For the Cake:


2 cups all-purpose flour


1 ¾ cups granulated sugar


¾ cup unsweetened cocoa powder


2 tsp baking soda


1 tsp baking powder


½ tsp salt


1 cup strong brewed coffee (cooled)


1 cup buttermilk


½ cup vegetable oil


2 large eggs


2 tsp vanilla extract



For the Chocolate-Rum Cream:


1 cup heavy cream


8 oz dark chocolate (chopped)


2 tbsp unsalted butter


2 tbsp dark rum



Instructions:


Make the Cake:


1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.



2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.



3. In another bowl, whisk coffee, buttermilk, oil, eggs, and vanilla until combined.



4. Gradually add wet ingredients to dry ingredients, stirring until smooth.



5. Divide batter evenly between prepared cake pans.



6. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.



7. Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.




Make the Chocolate-Rum Cream:


1. Heat heavy cream in a saucepan over medium heat until it begins to simmer.



2. Remove from heat and add chopped chocolate and butter, stirring until smooth.



3. Stir in rum and let cool until slightly thickened.




Assemble the Cake:


1. Place one cake layer on a serving plate. Spread a layer of chocolate-rum cream on top.



2. Place the second cake layer over it and spread the remaining chocolate-rum cream over the top and sides.



3. Let set at room temperature for at least 30 minutes before serving.
