Spanish Baked Cod with Paprika
Serves 4
Ingredients:
- 4 cod fillets (about 6 oz each)
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp smoked paprika (pimentΓ³n)
- ½ tsp sweet paprika (optional for extra depth)
- 1 tsp ground cumin
- ½ tsp chili flakes (optional, for a little heat)
- 1 lemon (zest + juice)
- 1 medium onion, thinly sliced
- 1 red bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 2 medium tomatoes, chopped (or 1 can diced tomatoes, drained)
- Fresh parsley, chopped (for garnish)
- Salt & black pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Prepare the seasoning oil: In a small bowl, mix olive oil, garlic, paprika, cumin, chili flakes, lemon zest, and juice.
- Arrange the veggies: Spread sliced onion, bell peppers, and tomatoes in a lightly oiled baking dish. Season with a pinch of salt and pepper.
- Season the cod: Pat dry the fillets, then place them on top of the veggies. Brush or drizzle with the paprika oil mixture.
- Bake: Cover loosely with foil and bake for 15 minutes. Remove foil and bake another 5–8 minutes, until fish flakes easily with a fork.
- Garnish & serve: Sprinkle with fresh parsley and serve hot with crusty bread, roasted potatoes, or rice.
