Spanish Baked Cod with Paprika

Serves 4

Ingredients:

  • 4 cod fillets (about 6 oz each)
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp smoked paprika (pimentΓ³n)
  • ½ tsp sweet paprika (optional for extra depth)
  • 1 tsp ground cumin
  • ½ tsp chili flakes (optional, for a little heat)
  • 1 lemon (zest + juice)
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 2 medium tomatoes, chopped (or 1 can diced tomatoes, drained)
  • Fresh parsley, chopped (for garnish)
  • Salt & black pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prepare the seasoning oil: In a small bowl, mix olive oil, garlic, paprika, cumin, chili flakes, lemon zest, and juice.
  3. Arrange the veggies: Spread sliced onion, bell peppers, and tomatoes in a lightly oiled baking dish. Season with a pinch of salt and pepper.
  4. Season the cod: Pat dry the fillets, then place them on top of the veggies. Brush or drizzle with the paprika oil mixture.
  5. Bake: Cover loosely with foil and bake for 15 minutes. Remove foil and bake another 5–8 minutes, until fish flakes easily with a fork.
  6. Garnish & serve: Sprinkle with fresh parsley and serve hot with crusty bread, roasted potatoes, or rice.

✨ This dish has that classic Spanish smoky-sweet paprika flavor and is light yet hearty with the roasted veggies.
