Pineapple Chili Recipe
Ingredients (6 servings):
- 1 lb (450 g) ground beef or ground turkey
- 1 small onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 1 (15 oz) can kidney beans, rinsed and drained
- 1 cup pineapple chunks (fresh or canned, drained)
- 2 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp cayenne pepper (optional, for heat)
- Salt and black pepper, to taste
- 1 tbsp olive oil
Optional toppings: Shredded cheese, sour cream, sliced jalapeños, green onions, fresh cilantro
Instructions:
-
Cook the meat:
In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef/turkey and cook until browned. Drain excess fat if needed. -
Add veggies:
Stir in onion, bell pepper, and garlic. Sauté 3–4 minutes until softened. -
Season:
Sprinkle in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Stir to coat the meat and veggies in spices. -
Add liquids & beans:
Pour in diced tomatoes, tomato sauce, and kidney beans. Stir well. -
Add pineapple:
Stir in pineapple chunks. Bring mixture to a boil, then reduce heat to low. -
Simmer:
Cover and simmer for 25–30 minutes, stirring occasionally, to let flavors meld. -
Taste & adjust:
Add extra chili powder or cayenne for more spice, or a little pineapple juice for sweetness. -
Serve:
Ladle into bowls and top with cheese, sour cream, and herbs if desired.
✨ The pineapple gives this chili a bright sweetness that balances the heat, making it unique but still hearty and comforting.
