Pineapple Chili Recipe

Ingredients (6 servings):

  • 1 lb (450 g) ground beef or ground turkey
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper (optional, for heat)
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

Optional toppings: Shredded cheese, sour cream, sliced jalapeños, green onions, fresh cilantro


Instructions:

  1. Cook the meat:
    In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef/turkey and cook until browned. Drain excess fat if needed.

  2. Add veggies:
    Stir in onion, bell pepper, and garlic. Sauté 3–4 minutes until softened.

  3. Season:
    Sprinkle in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Stir to coat the meat and veggies in spices.

  4. Add liquids & beans:
    Pour in diced tomatoes, tomato sauce, and kidney beans. Stir well.

  5. Add pineapple:
    Stir in pineapple chunks. Bring mixture to a boil, then reduce heat to low.

  6. Simmer:
    Cover and simmer for 25–30 minutes, stirring occasionally, to let flavors meld.

  7. Taste & adjust:
    Add extra chili powder or cayenne for more spice, or a little pineapple juice for sweetness.

  8. Serve:
    Ladle into bowls and top with cheese, sour cream, and herbs if desired.
