🦞 Lobster Ravioli with Creamy Garlic Butter Sauce
Ingredients
For the ravioli filling:
- 1 cup cooked lobster meat (chopped finely)
- 2 tablespoons ricotta cheese
- 2 tablespoons mascarpone or cream cheese
- 1 tablespoon grated Parmesan
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice
- 1 teaspoon chopped fresh parsley (optional)
- Salt & pepper, to taste
For the ravioli dough (or use wonton wrappers for an easy version):
- 2 cups all-purpose flour
- 3 large eggs
- 1 tablespoon olive oil
- Pinch of salt
For the creamy garlic butter sauce:
- 3 tablespoons butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 teaspoon lemon zest
- Salt & pepper, to taste
- Optional: chopped parsley or chives for garnish
🦐 Instructions
1. Make the filling
In a bowl, mix together lobster, ricotta, mascarpone, Parmesan, garlic, lemon juice, parsley, salt, and pepper. Cover and refrigerate while making the dough.
2. Prepare the pasta dough (or use wonton wrappers)
- On a clean surface, make a mound with the flour and create a well in the center.
- Add eggs, olive oil, and salt. Slowly mix with a fork, incorporating flour until dough forms.
- Knead for about 8 minutes until smooth and elastic.
- Wrap in plastic wrap and rest for 30 minutes.
3. Assemble the ravioli
- Roll dough thin (or use pasta machine).
- Cut into squares (about 3 inches each).
- Add 1 teaspoon of filling in the center of half the squares.
- Brush edges with water or egg wash, top with another square, and press edges firmly with a fork or fingers to seal.
- Dust with flour to prevent sticking.
4. Cook the ravioli
- Bring salted water to a boil.
- Gently add ravioli and cook for 3–4 minutes, until they float.
- Remove with a slotted spoon and set aside.
5. Make the creamy garlic butter sauce
- In a skillet, melt butter over medium heat.
- Add garlic and sauté 30 seconds until fragrant.
- Pour in cream, bring to a gentle simmer.
- Stir in Parmesan and lemon zest.
- Season with salt and pepper.
- Simmer 2–3 minutes until slightly thickened.
6. Combine & serve
- Gently toss cooked ravioli in the sauce.
- Garnish with parsley or chives and extra Parmesan.
- Serve warm with crusty bread or a green salad.
💡 Tips
- For extra flavor, drizzle with a little truffle oil or add a few shrimp to the sauce.
- You can make the filling and dough a day ahead — just keep them chilled.
