This Hawaiian Pineapple Coconut Fluff is a dreamy, no-bake dessert that tastes like a tropical vacation in every spoonful! Creamy, fruity, and loaded with pineapple, coconut, and fluffy marshmallows — it’s the perfect make-ahead dessert for potlucks, holidays, or any sweet craving.

Ingredients:

  • 1 (20 oz) can crushed pineapple, drained
  • 1 (8 oz) container Cool Whip (thawed)
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup sweetened shredded coconut
  • 1 ½ cups mini marshmallows
  • ½ cup chopped pecans (optional)
  • 1 small box (3.4 oz) instant vanilla or coconut pudding mix
  • ½ cup sour cream or plain Greek yogurt (optional for tang)
  • Maraschino cherries or toasted coconut for garnish

Instructions:

  1. In a large mixing bowl, combine the drained crushed pineapple and dry pudding mix. Stir until thickened and well blended.
  2. Add sweetened condensed milk and stir until smooth.
  3. Gently fold in the Cool Whip until light and fluffy.
  4. Add shredded coconut, mini marshmallows, and pecans (if using). Stir until evenly mixed.
  5. For extra creaminess and a slight tang, fold in sour cream or yogurt.
  6. Cover and refrigerate for at least 2 hours, or overnight, to allow the flavors to blend and the texture to firm up.
  7. Before serving, garnish with maraschino cherries, a sprinkle of toasted coconut, or a few extra pecans.
