🥘 Hearty Slow Cooker Beef & Vegetable Stew
Ingredients:
2 lbs beef stew meat, cubed
4 medium potatoes, diced
3 carrots, sliced
2 celery stalks, chopped
1 large onion, diced
3 garlic cloves, minced
1 can (14 oz) diced tomatoes
4 cups beef broth
2 tbsp tomato paste
2 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Salt & pepper to taste
2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Instructions:
1. Prep the slow cooker: Add beef, potatoes, carrots, celery, onion, and garlic.
2. Add liquids & seasoning: Stir in diced tomatoes, beef broth, tomato paste, Worcestershire, thyme, rosemary, bay leaves, salt, and pepper.
3. Cook: Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until beef is tender.
4. Optional thickening: 30 minutes before serving, stir in cornstarch slurry if you like a thicker stew.
5. Serve: Remove bay leaves, adjust seasoning, and serve hot with crusty bread.
