🍫 Mississippi Mud Cake Recipe
Ingredients
For the Cake:
1 cup (2 sticks) unsalted butter
1/3 cup unsweetened cocoa powder
2 cups granulated sugar
4 large eggs
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1 1/2 cups chopped pecans (optional)
1 teaspoon vanilla extract
1 (10.5 oz) bag mini marshmallows
For the Frosting:
1/2 cup (1 stick) butter
1/3 cup unsweetened cocoa powder
1/3 cup milk
1 (16 oz) box powdered sugar (about 3 3/4 cups)
1 teaspoon vanilla extract

🧁 Instructions
Make the Cake:
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
2. In a large saucepan, melt the butter over medium heat. Stir in cocoa powder.
3. Remove from heat and stir in sugar, eggs (one at a time), flour, salt, vanilla, and pecans if using.
4. Pour batter into prepared pan and bake for 25–30 minutes, or until a toothpick comes out clean.
5. Immediately after removing from oven, spread mini marshmallows evenly over the hot cake. Let them melt slightly.
Make the Frosting:
1. In a saucepan, melt butter. Stir in cocoa and milk; bring to a slight boil.
2. Remove from heat, and beat in powdered sugar and vanilla until smooth.
3. Pour warm frosting over the marshmallows. Spread gently to cover.

Let cool before slicing for cleaner pieces.
Best served slightly warm with a scoop of vanilla ice cream!
