🫕 Crockpot Corn Casserole
Ingredients:
1 (15 oz) can whole kernel corn, drained
1 (15 oz) can creamed corn
1 cup sour cream
½ cup (1 stick) melted butter
1 box (8.5 oz) Jiffy corn muffin mix
1 cup shredded cheddar cheese (optional, for extra flavor)

Instructions:
1. Spray the Crockpot with non-stick spray or use a liner for easy cleanup.
2. In a large bowl, mix together:
Corn
Creamed corn
Sour cream
Melted butter
Corn muffin mix
Cheese (if using)
3. Pour the mixture into the Crockpot and spread evenly.
4. Cover and cook on low for 4–5 hours or high for 2–3 hours, until the center is set and a little golden on the edges.
5. Let it rest for about 10–15 minutes before serving to thicken slightly.
🍽️ Tips:
Add a dash of black pepper or chopped green chilies for a kick.
Double the recipe for a crowd (just add a little extra time).
