Simple Cabbage Soup Recipe
Ingredients:
1 tablespoon olive oil or butter
1 onion, chopped
2 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
1/2 head of green cabbage, chopped
1 can (14 oz) diced tomatoes (with juice)
6 cups vegetable or chicken broth
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1/2 teaspoon paprika (optional)
1/2 teaspoon thyme or Italian seasoning
1 bay leaf (optional)
Handful of chopped parsley (for garnish)

Instructions:
1. Sauté the base:
In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook for 5–7 minutes until softened.
2. Add the cabbage and tomatoes:
Stir in the chopped cabbage and canned tomatoes.
3. Add broth and seasoning:
Pour in the broth. Add salt, pepper, paprika, thyme, and bay leaf if using. Stir well.
4. Simmer:
Bring to a boil, then reduce heat and let it simmer for 30–40 minutes, or until the cabbage and veggies are very tender.
5. Taste and adjust:
Add more salt or seasoning if needed. Remove bay leaf.
6. Serve warm with fresh parsley on top and maybe a slice of crusty bread.

Tips:
You can add cooked chicken or beans for protein.
A splash of apple cider vinegar or lemon juice at the end brightens it up.
This soup keeps well in the fridge and freezes beautifully.
