Asparagus Stuffed Chicken Breasts
Ingredients:
4 boneless, skinless chicken breasts
12 asparagus spears (trimmed)
4 slices mozzarella cheese (or provolone)
1 tsp garlic powder
1 tsp paprika
½ tsp onion powder
½ tsp Italian seasoning
Salt & pepper, to taste
1–2 tbsp olive oil

Instructions:
1. Preheat oven to 400°F (200°C).
2. Prepare chicken breasts:
Slice a pocket into the side of each chicken breast without cutting all the way through.
3. Season chicken:
Mix garlic powder, paprika, onion powder, Italian seasoning, salt, and pepper. Rub seasoning all over the outside and inside of the chicken.
4. Stuff chicken:
Place 3 asparagus spears and 1 slice of cheese into each pocket. Secure the opening with toothpicks if needed.
5. Sear:
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden brown.
6. Bake:
Transfer skillet to the oven and bake for 15–18 minutes, or until chicken is cooked through (internal temp 165°F/74°C).
