Teriyaki Chicken

 



Teriyaki Chicken Casserole 🍗🍚


This flavor-packed casserole combines tender chicken, rice, and veggies with a sweet and savory teriyaki sauce—perfect for an easy, delicious meal!


Ingredients:


For the Teriyaki Sauce:


¾ cup low-sodium soy sauce


½ cup water


¼ cup brown sugar


½ teaspoon ground ginger


½ teaspoon garlic powder


2 tablespoons honey


1 tablespoon cornstarch (mixed with 2 tablespoons water)



For the Casserole:


2 chicken breasts, cooked and shredded


2 cups cooked rice (white or brown)


2 cups frozen mixed vegetables (peas, carrots, corn, green beans)


1 tablespoon sesame seeds (optional)


2 tablespoons chopped green onions (optional)

Instructions:


1. Make the Teriyaki Sauce


1. In a saucepan over medium heat, whisk together soy sauce, water, brown sugar, ginger, garlic powder, and honey.



2. Bring to a gentle simmer, then add the cornstarch slurry (cornstarch + water), whisking continuously until the sauce thickens (about 2-3 minutes).



3. Remove from heat and set aside.




2. Assemble the Casserole


1. Preheat oven to 375°F (190°C).



2. In a large bowl, combine shredded chicken, cooked rice, and mixed vegetables.



3. Pour the teriyaki sauce over the mixture and stir to coat evenly.



4. Transfer to a greased 9x13-inch baking dish.




3. Bake & Serve


1. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes.



2. Sprinkle with sesame seeds and green onions before serving.
