Philly Cheesesteak Meatloaf
Ingredients:
1 tablespoon oil
1 onion, finely chopped
1 green bell pepper, finely chopped
8 ounces mushrooms, finely chopped
2 cloves garlic, minced
2 pounds ground beef
1 cup breadcrumbs
2 eggs, beaten
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
6 slices provolone cheese
Instructions:
1. Sauté Vegetables: Heat oil in a pan over medium heat. Add the chopped onion, bell pepper, mushrooms, and garlic. Cook until softened, about 5 minutes. Remove from heat and let cool slightly.
2. Mix Meatloaf: In a large bowl, combine ground beef, breadcrumbs, eggs, Worcestershire sauce, salt, black pepper, garlic powder, onion powder, and the sautéed vegetables. Mix until just combined—don’t overwork it.
3. Shape and Fill: Preheat oven to 375°F. Line a baking sheet with parchment paper. Take half of the meat mixture and shape it into a loaf base. Lay 3 slices of provolone cheese on top, leaving a small border. Place the remaining meat mixture on top and seal the edges.
4. Bake: Transfer the meatloaf to the prepared baking sheet and bake for 45–50 minutes, or until the internal temperature reaches 160°F.
5. Add Cheese: Remove from the oven and place the remaining 3 slices of provolone on top. Return to the oven for 5 minutes, or until the cheese is melted.
6. Rest and Serve: Let the meatloaf rest for 5–10 minutes before slicing. Enjoy with mashed potatoes or a side of your choice!
