Classic Potato Pancakes
Ingredients:
2 large eggs
2 tablespoons all-purpose flour
¼ teaspoon baking powder
½ teaspoon salt
¼ teaspoon pepper
6 medium potatoes, peeled and shredded
½ cup finely chopped onion
¼ cup vegetable oil
Instructions:
1. In a large bowl, beat the eggs, then add flour, baking powder, salt, and pepper, mixing until smooth.
2. Stir in the shredded potatoes and chopped onion until well combined.
3. Heat the vegetable oil in a large skillet over medium heat.
4. Drop heaping tablespoonfuls of the potato mixture into the hot oil, pressing each to flatten.
5. Cook until browned and crisp, about 3 minutes per side.
6. Transfer to a paper towel-lined plate to drain excess oil.
7. Repeat with the remaining mixture.
