Classic Chicken Salad
Ingredients:
2 cups cooked chicken, shredded or diced
½ cup mayonnaise (or Greek yogurt for a lighter version)
1 teaspoon Dijon mustard (optional, for a slight tang)
½ cup celery, finely chopped
¼ cup red onion, finely chopped
¼ cup sweet or dill pickles, finely chopped (optional)
½ cup grapes, halved (or dried cranberries for a sweeter touch)
¼ cup pecans or almonds, chopped (optional for crunch)
1 teaspoon lemon juice
½ teaspoon garlic powder
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
Instructions:
1. In a large bowl, mix the mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
2. Add the shredded chicken, celery, red onion, pickles, grapes, and nuts.
3. Stir until everything is evenly coated.
4. Cover and refrigerate for at least 30 minutes for flavors to meld.
5. Serve on bread, croissants, lettuce wraps, or crackers.
