Carrot Cake Balls


Ingredients:


1 box carrot cake mix

1/4 cup water

1/2 cup vegetable oil

3 large eggs

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1 cup white chocolate chips (for coating)

Preparation:


Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Prepare the carrot cake mix according to package instructions, adding water, oil, and eggs. Bake for 25-30 minutes, then let it cool completely.

Crumble the cooled cake into small pieces in a large bowl.

In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Stir this into the crumbled cake until well combined.

Roll the mixture into small balls and place on the baking sheet. Chill in the fridge for 30 minutes.

Melt white chocolate chips and dip the chilled cake balls into the chocolate. Place back on the sheet to set. Let cool, then enjoy!
