Cheesy Mashed Potato Puffs

Ingredients
2 cups cold mashed potatoes (leftovers work perfectly)
1 cup shredded sharp cheddar cheese
¼ cup finely grated Parmesan cheese
2 large eggs
Optional: 2 tbsp chopped chives, ½ tsp garlic powder, salt & pepper to taste

Instructions
1. Preheat the oven: to 400°F (200°C). Grease a muffin tin lightly.
2. Mix ingredients: In a large bowl, combine the mashed potatoes, cheddar, Parmesan, eggs, and optional seasonings. Mix until smooth.
3. Fill muffin tin: Spoon the mixture into the muffin cups, filling about ¾ full. Smooth the tops slightly.
4. Bake: for 20–25 minutes, until golden brown and crisp on top.
5. Cool & serve: Let them cool for 5 minutes, then remove from the tin.
Serving Suggestions
Serve with sour cream or ranch dressing for dipping.
