Ingredients

For the popcorn:

  • ½ cup popcorn kernels (makes about 12 cups popped)
  • 1 tablespoon vegetable oil (if popping on the stove)

For the caramel coating:

  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed brown sugar
  • ½ cup light corn syrup
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon pure vanilla extract

Instructions

1️⃣ Pop the popcorn:
Pop the kernels using your preferred method — stovetop, air popper, or popcorn maker. Remove any unpopped kernels and place the popped corn in a large oven-safe mixing bowl (or two if needed). Preheat your oven to 250°F (120°C).


2️⃣ Make the caramel sauce:
In a medium saucepan, melt the butter over medium heat.
Add brown sugar, corn syrup, and salt. Stir constantly until the mixture begins to boil.
Once boiling, stop stirring and let it boil undisturbed for 4–5 minutes (the caramel should be thick and golden).


3️⃣ Add vanilla and baking soda:
Remove the saucepan from heat. Stir in vanilla extract and baking soda — the mixture will bubble up, making it lighter and easier to coat the popcorn.


4️⃣ Coat the popcorn:
Quickly pour the caramel mixture over the popcorn and gently stir with a spatula until evenly coated. Don’t worry if it’s not perfect — the oven will help spread the caramel later.


5️⃣ Bake to perfection:
Transfer the caramel-coated popcorn to a large baking sheet lined with parchment paper.
Bake for 45–60 minutes, stirring every 15 minutes to ensure even coating and crisp texture.


6️⃣ Cool and break apart:
Remove from the oven and let it cool completely. Once cool, break into clusters and store in an airtight container for up to 2 weeks.
