Golden Crisped Salmon Cakes with Spinach, Feta & Fresh Herbs

1 lb cooked salmon, flaked (fresh or canned, skinless & boneless)
1 cup fresh spinach, finely chopped
½ cup crumbled feta cheese
1 large egg
½ cup breadcrumbs (panko or regular)
¼ cup red onion, finely diced
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped (optional)
1 garlic clove, minced
Zest of 1 lemon
Salt & black pepper, to taste
2–3 tbsp olive oil (for searing)
Directions:
In a large mixing bowl, combine flaked salmon, spinach, feta, red onion, garlic, lemon zest, herbs, and breadcrumbs.
Add egg and gently mix with your hands or a fork until the mixture binds—don’t overmix.
Season with salt and pepper to taste.
Form the mixture into 6–8 patties, pressing gently so they hold shape.
Heat olive oil in a skillet over medium heat.
Cook patties in batches for 3–4 minutes per side, or until golden brown and crispy on both sides.
Remove and drain on paper towels.
Serve warm, garnished with fresh herbs and a side of lemon wedges or Greek yogurt sauce.
