This cozy, nourishing fish soup is the perfect way to enjoy a light yet satisfying meal any day of the week. It’s brimming with tender chunks of white fish, hearty potatoes, and flavorful vegetables, all simmered gently in a fragrant broth. Every spoonful feels wholesome, comforting, and fresh — like a taste of the sea in your kitchen.

Ingredients (14 total):

  • 1½ lbs white fish fillets (cod, haddock, or tilapia)
  • 4 cups fish stock or seafood broth
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 2 cups diced potatoes
  • 1 tsp dried thyme
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp freshly squeezed lemon juice
  • ½ tsp freshly ground black pepper
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 2 tbsp olive oil

Instructions:
Heat the olive oil in a large soup pot over medium heat. Add the onion, celery, and garlic, and sautΓ© for 5 minutes until fragrant and lightly golden. Stir in the diced potatoes, thyme, paprika, salt, and black pepper, letting the spices bloom for a few minutes. Pour in the fish stock and canned tomatoes with their juice, stirring well. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender and the broth has thickened slightly.

Cut the fish fillets into large bite-sized pieces and gently add them to the simmering soup. Cook for another 5–7 minutes, just until the fish is opaque and flakes easily with a fork. Stir in the lemon juice and fresh parsley right before serving to brighten the flavors. Taste and adjust seasoning if needed.

Ladle into bowls and enjoy it hot with slices of crusty bread or a light green salad. This soup is healthy, flavorful, and heartwarming — perfect for a quick weeknight dinner or a cozy weekend lunch.
