Meat and Potato Casserole
Ingredients:
- 1 lb ground beef (or ground pork/turkey)
- 1 medium onion, chopped
- 3–4 medium potatoes, peeled and thinly sliced
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- 1/2 cup milk
- 1 cup shredded cheddar cheese (or mozzarella)
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tsp paprika
- Salt & black pepper, to taste
- Optional: 1/2 cup sour cream for extra creaminess
Instructions:

Preheat oven to 375°F (190°C). Grease a 9x13 casserole dish.

Cook the meat:
- In a skillet over medium heat, cook ground beef and onion until browned.
- Drain excess grease, season with salt, pepper, garlic powder, and paprika.

Prepare sauce:
- In a bowl, whisk together cream of mushroom soup and milk.
- (Add sour cream if using.)

Assemble casserole:
- Layer half of the sliced potatoes in the dish.
- Spread half of the beef mixture over them.
- Pour half of the soup mixture on top.
- Repeat layers with remaining potatoes, beef, and soup.

Top it off:
- Dot with butter, cover with foil, and bake for 50–55 minutes (until potatoes are tender).
- Remove foil, sprinkle cheese on top, and bake 10–15 minutes more until golden and bubbly.

Serve hot with a side salad or steamed veggies.
👉 This casserole reheats well and is even better the next day.
