Meat and Potato Casserole

Ingredients:

  • 1 lb ground beef (or ground pork/turkey)
  • 1 medium onion, chopped
  • 3–4 medium potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese (or mozzarella)
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & black pepper, to taste
  • Optional: 1/2 cup sour cream for extra creaminess

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x13 casserole dish.

  2. Cook the meat:

    • In a skillet over medium heat, cook ground beef and onion until browned.
    • Drain excess grease, season with salt, pepper, garlic powder, and paprika.
  3. Prepare sauce:

    • In a bowl, whisk together cream of mushroom soup and milk.
    • (Add sour cream if using.)
  4. Assemble casserole:

    • Layer half of the sliced potatoes in the dish.
    • Spread half of the beef mixture over them.
    • Pour half of the soup mixture on top.
    • Repeat layers with remaining potatoes, beef, and soup.
  5. Top it off:

    • Dot with butter, cover with foil, and bake for 50–55 minutes (until potatoes are tender).
    • Remove foil, sprinkle cheese on top, and bake 10–15 minutes more until golden and bubbly.
  6. Serve hot with a side salad or steamed veggies.


👉 This casserole reheats well and is even better the next day.
