🍬 Homemade Turtle Clusters
Ingredients:
- 2 cups pecan halves (toasted if desired)
- 1 bag (11 oz) soft caramels (about 35 pieces)
- 2 tablespoons heavy cream
- 2 cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or shortening (optional, for smoother melting)
Instructions:

Prepare a tray:
Line a baking sheet with parchment paper or a silicone mat. -
Arrange pecans:
Place pecans in small clusters (about 4–5 halves each) on the tray, leaving space between each cluster. -
Melt the caramel:
In a microwave-safe bowl, combine caramels and heavy cream.
Heat in 30-second bursts, stirring each time, until smooth (about 1½–2 minutes total). -
Add the caramel layer:
Spoon about 1 teaspoon of melted caramel onto the center of each pecan cluster, letting it drizzle a bit so it sticks them together.
Let cool for 10–15 minutes until set. -
Melt the chocolate:
In another bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring until smooth. -
Finish the clusters:
Spoon melted chocolate over each caramel-pecan cluster, covering the caramel completely.
Let sit until chocolate hardens (you can refrigerate them for 15–20 minutes to speed it up).
Storage:
Store in an airtight container at room temperature for up to 2 weeks or refrigerate for longer freshness.
Tip:
Use dark chocolate for a richer, less-sweet version — or drizzle white chocolate on top for a bakery-style touch.
