Why You’ll Love Crockpot Pepper Steak
Hands-off cooking: The slow cooker does the work, freeing up your day. Tender, juicy beef: Even tougher cuts become fork-tender. Full of flavor: A rich sauce of soy, beef broth, and aromatics brings comfort to the table.
Ingredients
- 1½ lb flank or round steak, thinly sliced
- 2 bell peppers (mixed colors), sliced
- 1 medium onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- ⅓ cup soy sauce
- 2 tbsp Worcestershire sauce
- 2 tbsp brown sugar (or honey)
- 1 tsp smoked paprika
- ½ tsp black pepper (plus more to taste)
- 2 tbsp cornstarch + 3 tbsp water (for thickening)
- 2 tbsp vegetable oil
Instructions
- Heat oil in a skillet. Sear steak slices 1–2 minutes per side until browned. (Optional but adds flavor.)
- Place peppers and onion in the slow cooker; add seared steak on top.
- Whisk broth, soy, Worcestershire, brown sugar, garlic, paprika, and black pepper. Pour over steak.
- Cook on LOW 6–7 hours or HIGH 3–4 hours, until beef is tender and veggies softened.
- 30 minutes before serving, mix cornstarch and water and stir into crockpot to thicken. Cook until sauce glossy.
- Serve over rice, noodles, or mashed potatoes. Garnish with sliced green onions or sesame seeds.
Pro Tips
Slice steak thin across the grain for maximum tenderness. If you prefer more sauce, double the broth and adjust cornstarch at the end. Add a splash of rice vinegar or a squeeze of lime for brightness.
Enjoy a low-effort, family-friendly dinner that tastes like it simmered all day in a restaurant kitchen.
