Crock Pot Pepper Steak

 




🍲 Crock Pot Pepper Steak

Ingredients:

  • 2 lbs beef sirloin or round steak, cut into strips
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced (optional)
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 1 (10.5 oz) can condensed beef broth (or 1 cup beef stock)
  • 3 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp sugar (optional, balances flavor)
  • ½ tsp ground ginger (optional for a little warmth)
  • 1 tsp black pepper
  • 2 tbsp cornstarch + 3 tbsp water (for thickening, optional)

Instructions:

  1. Place beef strips, bell peppers, onion, and garlic in the crock pot.
  2. In a bowl, combine diced tomatoes, beef broth, soy sauce, Worcestershire sauce, sugar, ginger, and black pepper. Pour over beef and veggies.
  3. Cover and cook on Low 6–7 hours or High 3–4 hours, until beef is tender.
  4. If you prefer a thicker sauce: 30 minutes before serving, mix cornstarch with water and stir into crock pot. Cover and cook until thickened.
  5. Taste and adjust seasoning (extra soy sauce for saltiness, more black pepper for spice).

Serving Ideas:

  • Serve over hot rice 🍚, egg noodles 🍜, or mashed potatoes 🥔.
  • Garnish with fresh parsley or sesame seeds.
