🍲 Crock Pot Pepper Steak
Ingredients:
- 2 lbs beef sirloin or round steak, cut into strips
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced (optional)
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes (with juice)
- 1 (10.5 oz) can condensed beef broth (or 1 cup beef stock)
- 3 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tsp sugar (optional, balances flavor)
- ½ tsp ground ginger (optional for a little warmth)
- 1 tsp black pepper
- 2 tbsp cornstarch + 3 tbsp water (for thickening, optional)
Instructions:
- Place beef strips, bell peppers, onion, and garlic in the crock pot.
- In a bowl, combine diced tomatoes, beef broth, soy sauce, Worcestershire sauce, sugar, ginger, and black pepper. Pour over beef and veggies.
- Cover and cook on Low 6–7 hours or High 3–4 hours, until beef is tender.
- If you prefer a thicker sauce: 30 minutes before serving, mix cornstarch with water and stir into crock pot. Cover and cook until thickened.
- Taste and adjust seasoning (extra soy sauce for saltiness, more black pepper for spice).
Serving Ideas:
- Serve over hot rice 🍚, egg noodles 🍜, or mashed potatoes 🥔.
- Garnish with fresh parsley or sesame seeds.
