Coconut Lime Fish Soup
Ingredients
500 g fresh white fish (cod, tilapia, or similar), cut into bite-sized pieces
400 ml coconut milk
Juice and zest of 2 limes
3 cloves garlic, finely chopped
2 cm piece fresh ginger, grated
1 tbsp olive oil
1 onion, finely chopped
1 red chili pepper, finely chopped (optional, for heat)
1 tsp ground cumin
½ tsp turmeric powder
Salt & pepper, to taste
Fresh coriander (cilantro), for garnish

Instructions
1. Prepare base – In a large pot, heat olive oil over medium heat. Add onion, garlic, ginger, and chili. Sauté until soft and fragrant.
2. Spice it up – Stir in cumin and turmeric, cooking for 1 minute to release their aroma.
3. Make it creamy – Pour in the coconut milk, lime juice, and zest. Stir and bring to a gentle simmer.
4. Cook the fish – Add fish pieces to the soup. Simmer for 5–7 minutes, or until the fish is opaque and flakes easily with a fork.
5. Taste & adjust – Season with salt and pepper to your liking.
6. Serve – Ladle into bowls, garnish with fresh coriander, and serve hot.
