๐ฎ Walking Taco Casserole
All the flavors of a taco in a cozy, cheesy, baked dish — no walking required!
๐ Ingredients:
1 lb ground beef (or ground turkey)
1 small onion, diced
1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
1/2 cup water
1 can (10 oz) Rotel (diced tomatoes with green chilies, undrained)
1 can (15 oz) black beans, drained and rinsed
1 1/2 cups shredded cheddar or Mexican blend cheese
1 bag (9.75 oz) Nacho Cheese Doritos or Fritos, crushed slightly
Optional toppings: sour cream, shredded lettuce, chopped tomatoes, sliced jalapeรฑos, green onions, avocado
๐ฉ๐ณ Directions:
1️⃣ Preheat oven to 350°F (175°C).
2️⃣ Cook beef and onion
In a large skillet over medium heat, cook ground beef and diced onion until meat is browned. Drain excess fat if needed.
3️⃣ Add seasoning & mix-ins
Stir in taco seasoning and water. Simmer for 2–3 minutes. Then add Rotel and black beans. Cook for another 2–3 minutes until well combined and heated through.
4️⃣ Layer the casserole
In a greased 9x13-inch baking dish:
Spread a layer of slightly crushed chips on the bottom.
Top with the beef mixture.
Sprinkle evenly with shredded cheese.
5️⃣ Bake
Place casserole in the oven and bake for 15–20 minutes, or until cheese is melted and bubbly.
6️⃣ Top & Serve
Top with more crushed chips and your favorite taco toppings like sour cream, lettuce, and tomatoes.
