🥄 Pantry Pleaser
Quick, hearty, and made from pantry staples
🛒 Ingredients:
1 can (15 oz) diced tomatoes (with juices)
1 can (15 oz) beans (any kind: black, kidney, or white beans), drained
1 can (12 oz) corn, drained
1 cup uncooked pasta (elbow, penne, or whatever you have)
2 cups water or broth (chicken or vegetable)
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika (optional but tasty)
Salt and pepper to taste
1 cup shredded cheese (optional, for topping)
🍳 Instructions:
1. In a large skillet or saucepan, add tomatoes (with juices), beans, corn, dry pasta, and water/broth.
2. Stir in garlic powder, onion powder, paprika, salt, and pepper.
3. Bring to a boil, then reduce to simmer. Cover and cook for about 12–15 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
4. If using, sprinkle cheese over the top, cover again for 2 minutes until melted.
5. Serve hot! Great with crackers, tortilla chips, or just as is.
