🥬 German Cabbage with Fluffy Dumplings
Ingredients
For the Cabbage:
1 medium green cabbage, chopped
1 large onion, diced
2 tbsp butter or bacon grease
1 tsp caraway seeds (optional, traditional flavor)
Salt & pepper to taste
½ tsp smoked paprika (optional)
1 cup vegetable or chicken broth
For the Dumplings:
2 cups all-purpose flour
2 tsp baking powder
1 tsp salt
2 large eggs
¾ cup milk
2 tbsp melted butter or oil
2 tbsp chopped parsley (optional)
🧑🍳 Instructions
1. Prepare the Cabbage
In a large skillet or Dutch oven, melt butter or bacon grease over medium heat.
Add diced onions and cook until soft and translucent, about 5 minutes.
Stir in chopped cabbage, caraway seeds (if using), salt, pepper, and paprika.
Pour in broth, cover, and simmer for about 20–25 minutes, stirring occasionally, until cabbage is tender.
2. Make the Dumpling Batter
In a bowl, mix flour, baking powder, and salt.
In a separate bowl, whisk together eggs, milk, and melted butter.
Combine wet and dry ingredients just until blended. Fold in parsley if using.
3. Cook the Dumplings
Drop spoonfuls (about a heaping tablespoon each) of dumpling batter over the simmering cabbage.
Cover tightly with a lid (do not peek!) and cook on low heat for 15–18 minutes, until dumplings are puffed and cooked through.
Test one by cutting it open—no wet batter should remain inside.

Scoop the cabbage into bowls, top with a couple dumplings, and serve with a sprinkle of fresh pepper or a dollop of sour cream if desired.
