🌮 Fideo with Potatoes and Ground Beef


Ingredients:


7 oz (about 1 cup) fideo pasta (or broken vermicelli noodles)


1 lb ground beef


2 small russet potatoes, peeled and diced


1/2 small onion, finely chopped


2 garlic cloves, minced


1 (8 oz) can tomato sauce


2 cups beef broth (or water + bouillon)


1 tsp cumin


1/2 tsp chili powder (optional)


Salt and pepper, to taste


2 tbsp oil (for toasting the fideo)

Instructions:


1. Brown the Beef:


In a large skillet or pot over medium heat, cook the ground beef until browned. Drain excess grease if needed.


Add chopped onions and garlic; sauté for 2–3 minutes until soft and fragrant.




2. Add Potatoes:


Stir in the diced potatoes and cook for 5 minutes, letting them slightly soften.




3. Toast the Fideo:


Push everything to the side of the pan or remove temporarily.


Add a bit of oil and toast the fideo noodles for 3–4 minutes, stirring constantly, until golden brown.




4. Combine and Simmer:


Mix the ground beef, potatoes, and toasted fideo together.


Add tomato sauce, beef broth, cumin, chili powder (if using), salt, and pepper.


Stir well and bring to a boil.




5. Simmer Until Tender:


Reduce heat to low, cover, and simmer for about 15–18 minutes, or until the noodles and potatoes are tender and the liquid has thickened. Stir occasionally to prevent sticking.


6. Serve:


Garnish with chopped cilantro or a squeeze of lime if desired.


Serve hot with warm tortillas or crusty bread.
