Creamy Chicken and Vegetable Skillet

Ingredients:


2 tablespoons olive oil


1 ½ lbs boneless, skinless chicken thighs or breasts, cut into chunks


Salt and black pepper to taste


1 teaspoon garlic powder


1 teaspoon onion powder


½ teaspoon dried thyme


1 small onion, diced


2 garlic cloves, minced


2 cups mixed vegetables (e.g., carrots, peas, corn, green beans)


1 cup baby spinach (optional)


2 tablespoons all-purpose flour


1 ½ cups chicken broth


1 cup heavy cream (or half-and-half for lighter option)


½ cup grated Parmesan cheese


Fresh parsley, chopped (for garnish)

Instructions:


1. Sear the Chicken:


Heat olive oil in a large skillet over medium-high heat.


Season chicken with salt, pepper, garlic powder, onion powder, and thyme.


Add chicken to the skillet and cook until golden and cooked through (about 6–8 minutes). Remove and set aside.




2. Sauté the Aromatics:


In the same skillet, add diced onion and cook until softened, about 3 minutes.


Stir in garlic and cook for another 30 seconds until fragrant.




3. Add the Vegetables:


Add the mixed vegetables and sauté for 4–5 minutes until just tender.


Stir in baby spinach, if using, and let wilt.




4. Make the Creamy Sauce:


Sprinkle flour over the vegetables and stir to coat.


Slowly pour in chicken broth, stirring constantly to avoid lumps.


Add cream and bring to a gentle simmer. Cook until thickened (5–7 minutes).


5. Combine and Finish:


Return chicken to the skillet and stir in Parmesan cheese.


Let everything simmer together for 5 more minutes, allowing the flavors to blend.


6. Serve:


Garnish with fresh parsley.


Serve hot with mashed potatoes, rice, noodles, or crusty bread.
