π Cattle Drive Casserole Recipe
Ingredients:
1 lb ground beef
1 small onion, finely chopped
1 (10 oz) can diced tomatoes with green chiles (like Rotel)
1 (8 oz) can tomato sauce
1 packet taco seasoning mix (or 2 tbsp homemade)
1/2 cup sour cream
1/2 cup mayonnaise
1 cup shredded cheddar cheese, divided
1 cup shredded Monterey Jack cheese, divided
1 (8 oz) can crescent roll dough
1 small green bell pepper, diced (optional)
Salt & pepper, to taste

Instructions:
1. Preheat oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
2. In a large skillet, cook the ground beef and onion over medium heat until browned. Drain excess fat.
3. Stir in the diced tomatoes with green chiles, tomato sauce, taco seasoning, and green pepper if using. Simmer for about 5–7 minutes. Season with salt and pepper.
4. In a medium bowl, mix together sour cream, mayonnaise, and half of each cheese.
5. Unroll the crescent dough and press it into the bottom of your prepared baking dish to form a crust.
6. Spread the beef mixture evenly over the dough, then top with the creamy cheese mixture.
7. Sprinkle the remaining cheddar and Monterey Jack cheese on top.
8. Bake for 30–35 minutes, or until the crust is golden and the cheese is bubbling.
9. Let it sit for 5–10 minutes before slicing.
