Smothered Chicken with Creamed Spinach, Bacon & Mushrooms

π Meat
1½ lb chicken breasts (skinless, boneless)
4 slices bacon (cooked and chopped)
π₯¬ Produce
4 cloves garlic (minced)
4 oz mushrooms (sliced)
10 oz spinach (fresh)
π§ Seasoning
¼ tsp lemon pepper seasoning
¼ tsp paprika
Salt to taste
π§ Fats
2 tbsp vegetable oil
1 tbsp butter
π§ Dairy
⅔ cup half-and-half
⅔ cup mozzarella cheese (shredded)
4 slices pepper jack cheese

π³ Instructions
1. Prepare the chicken:
Season the chicken breasts on both sides with lemon pepper, paprika, and a pinch of salt.
2. Cook chicken:
Heat vegetable oil in a large skillet over medium heat. Sear chicken 4–5 minutes per side until golden and cooked through. Transfer to a plate and cover with foil.
3. SautΓ© veggies:
In the same skillet, add butter. SautΓ© mushrooms for 3–4 minutes, then add garlic and spinach. Cook until spinach wilts.
4. Make the sauce:
Pour in the half-and-half and mozzarella cheese. Stir until cheese melts and sauce thickens.
5. Add chicken & bacon:
Return chicken to the skillet. Top each breast with pepper jack cheese slices and chopped bacon. Cover for 2–3 minutes until cheese melts.
6. Serve:
Serve the chicken smothered with the creamy spinach-mushroom sauce. π
