Slow Cooker Brisket with Balsamic Onion Gravy
Ingredients:
3–4 lb beef brisket (trimmed of excess fat)
2 large onions, thinly sliced
4 garlic cloves, minced
½ cup beef broth
¼ cup balsamic vinegar
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
1 tsp salt
½ tsp black pepper
1 tbsp olive oil (for searing)

Instructions:
1. Sear the Brisket (Optional but adds flavor):
Heat olive oil in a skillet over medium-high heat. Sear the brisket on both sides until nicely browned (about 3–4 minutes per side). Transfer to a slow cooker.
2. Make the Sauce:
In a bowl, mix together balsamic vinegar, beef broth, brown sugar, Worcestershire sauce, Dijon mustard, salt, and pepper.
3. Layer the Onions & Garlic:
Add the sliced onions and minced garlic to the bottom of the slow cooker. Place the seared brisket on top.
4. Pour the Sauce:
Pour the prepared sauce over the brisket and onions.
5. Cook:
Low for 8–10 hours
Or High for 4–5 hours
(Low is best for tenderness.)
6. Thicken the Gravy (Optional):
After cooking, remove brisket and cover to rest. Transfer the onion gravy to a saucepan. Simmer and reduce, or mix 1 tbsp cornstarch with 2 tbsp water and stir in to thicken.
7. Slice and Serve:
Slice brisket against the grain. Spoon the balsamic onion gravy over the top and serve.
