Peruvian-Style Chicken
Ingredients:
2 lbs chicken thighs (bone-in, skin-on preferred)
2 tbsp olive oil
1 tbsp paprika
1 tbsp ground cumin
1 tbsp garlic powder
1 tsp oregano
1 tsp salt
1/2 tsp black pepper
Juice of 1 lime
4 garlic cloves, minced
Instructions:
1. Make the Marinade: In a bowl, mix olive oil, paprika, cumin, garlic powder, oregano, salt, pepper, lime juice, and minced garlic.
2. Marinate Chicken: Rub the marinade all over the chicken. Cover and marinate for at least 1 hour (overnight for best flavor).
3. Cook Chicken:
Oven: Preheat oven to 425°F (220°C). Place chicken on a baking sheet and roast for 35–40 minutes, until skin is crispy and internal temp hits 165°F.
Grill Option: Grill on medium-high heat for 6–8 minutes per side.

Creamy Green Sauce (Aji Verde)
Ingredients:
1 cup fresh cilantro (packed)
1/2 cup mayonnaise
1/4 cup sour cream or Greek yogurt
1 jalapeño (or 2 if you like it spicy, seeds removed for less heat)
2 garlic cloves
1 tbsp olive oil
1 tbsp lime juice
1 tsp white vinegar
Salt to taste
Instructions:
1. Blend all sauce ingredients in a blender or food processor until smooth.
2. Chill until ready to serve. Drizzle over the chicken or use as a dipping sauce.
Serve with: Roasted potatoes, rice, salad or grilled veggies.
