Hearty Ground Beef and Potatoes Skillet
Ingredients:
1 lb ground beef
1 small onion, diced
2–3 cloves garlic, minced
3 medium potatoes, diced small
1 cup beef broth
1 tsp paprika
1/2 tsp dried thyme or Italian seasoning
Salt & pepper to taste
1 cup shredded cheddar cheese (optional)
1 tbsp olive oil or butter
Fresh parsley for garnish (optional)

Instructions:
1. Cook the potatoes:
In a large skillet, heat olive oil over medium heat.
Add diced potatoes and cook until golden and almost tender (about 10 minutes), stirring occasionally.
Remove and set aside.
2. Cook the beef mixture:
In the same skillet, cook ground beef until browned.
Add diced onion and garlic; cook until softened.
Drain excess grease if needed.
3. Combine everything:
Return the potatoes to the skillet.
Add beef broth, paprika, thyme, salt, and pepper.
Stir well, cover, and simmer for about 5–7 minutes, or until potatoes are fork-tender and liquid is mostly absorbed.
4. Add cheese (optional):
Sprinkle shredded cheese on top, cover, and let it melt for 2 minutes.
5. Garnish and serve:
Top with chopped parsley and serve
