German Potato Soup
Ingredients:
5 medium potatoes, peeled and diced
1 large onion, diced
2 carrots, peeled and sliced
2 celery stalks, chopped
3 cloves garlic, minced
6 cups chicken or vegetable broth
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ teaspoon marjoram (optional, but traditional)
½ teaspoon caraway seeds (optional, for authentic flavor)
1 bay leaf
1 cup smoked sausage or bacon, sliced (optional)
½ cup heavy cream (optional, for a creamy version)
2 tablespoons butter or oil
Fresh parsley for garnish
Instructions:
1. Sauté the Aromatics: In a large pot, heat the butter or oil over medium heat. Add the onions, carrots, and celery. Sauté until softened, about 5 minutes. Add the garlic and cook for another minute.
2. Add Potatoes and Broth: Stir in the diced potatoes, broth, salt, pepper, marjoram, caraway seeds (if using), and bay leaf. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until the potatoes are tender.
3. Cook the Sausage (if using): In a separate pan, brown the sliced sausage or bacon until crispy. Set aside.
4. Mash or Blend (Optional): For a thicker soup, mash some of the potatoes with a potato masher or blend a portion of the soup using an immersion blender.
5. Add Sausage and Finish: Stir in the cooked sausage or bacon. If making a creamy version, add heavy cream and stir well. Simmer for another 5 minutes.
6. Serve: Remove the bay leaf, garnish with fresh parsley, and enjoy with crusty bread or pretzels!
