Cheesy Lasagna Soup

Ingredients:
1 lb ground beef (or Italian sausage)
1 small onion, diced
3 garlic cloves, minced
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
1/2 tsp salt + 1/2 tsp black pepper
2 tbsp tomato paste
1 (15 oz) can crushed tomatoes
1 (15 oz) can tomato sauce
4 cups beef broth
8 lasagna noodles, broken into pieces
1 cup ricotta cheese
1 ½ cups shredded mozzarella cheese
1/4 cup grated Parmesan
Fresh basil or parsley for garnish (optional)

Instructions:
1. Brown the meat:
In a large pot, cook the ground beef and onion over medium heat until browned. Drain excess grease if needed.
2. Add flavor:
Stir in garlic, Italian seasoning, red pepper flakes, salt, pepper, and tomato paste. Cook for 1 minute.
3. Build the soup:
Add crushed tomatoes, tomato sauce, and beef broth. Bring to a boil.
4. Add pasta:
Stir in the broken lasagna noodles. Reduce heat and simmer for 10–12 minutes or until noodles are tender.
5. Make it cheesy:
In a small bowl, mix ricotta, 1 cup mozzarella, and Parmesan. (This is your "cheesy dollop").
6. Serve:
Ladle soup into bowls and top each serving with a generous scoop of the cheese mixture. Sprinkle extra mozzarella on top and garnish with fresh basil or parsley.
